Simple Things

Five simple things that made my week.

1. A rainbowRainbow Salad | the beauty in simplebecause it was every bit as delicious as it was pretty.

2. Buckwheat granolaBuckwheat Granola | the beauty in simplebecause, move over oats, you’ve just been replaced. So good!

3. Fermented sauerkrautFermented Sauerkraut | the beauty in simplebecause it’s the first batch that didn’t end up in the compost. I received expert kraut-making advice from my friend Leslee and loosely followed her favorite recipe.

4. Homemade corn tortillasHomemade Corn Tortillas | the beauty in simplebecause my friend Celia inspired me (her’s are way more professional looking).

5. A favorite salsaHomemade Salsa | the beauty in simplebecause something needed to top those tortillas.

Can you tell I’ve been hungry? Gathering around the table with my family is always a favorite part of my week. This week at the dinner table my almost 17 year-old son quizzed my 18 year-old daughter on her beliefs to “help” her determine her political affiliation so she’ll cast the right vote on her first ballet. I listened to the conversation with a smile on my face and a settling of my heart that these kids (mine and others) put great thought into their choices and the future of their world. Happy Friday!

  1. I’m honored to be mentioned! The kraut looks amazing. I thought it might turn a funny color, but no…fabulous.

    1. Next time I’ll probably use all green cabbage, but the addition of the red cabbage did make it pretty. You’d think I added food coloring. I’ve been eating a spoonful everyday – it’s so good!

  2. Oh. my. goodness. Everything here looks so delicious! I can’t wait to try out that salsa recipe. Thank you for the shoutout with the tortillas – SO glad you tried them, yours look amazing!

    1. Everyone agreed the tortillas should be on the weekly meal rotation. I served them with homemade refried beans, grated cheese, and our favorite salsa, but I’d be happy eating a stack without anything on them. To die for!

  3. Julie, Your rainbow salad looks beautiful. I would love to make your salsa. I found the picture of the ingredients. Are there any measurements. Just put everything in the blender and wala? Julie next year you should write a cookbook with all of your recipes. You have enough recipes and everyone would love it. How are you doing with not purchasing something new? Is it hard?

    1. Patti, the salsa is so good and simple to make! Just follow the link and scroll to the bottom of the page and you’ll see the recipe. I need to give an update soon on my buy nothing new year. It’s going really well! Thanks for asking!

  4. I’m so glad the cabbage worked for you. Fermented cabbage is one of our favorites. I especially like it on beans and rice or as a taco topping. Straight out of the jar is good too though. Yum.

    1. I hadn’t thought of fermented cabbage on rice and beans or on tacos, but I bet that’s delicious! Maybe tomorrow night’s dinner? Thanks for the suggestion!

  5. What wonderful looking and delicious food recipes. Julie. You are so thoughtful and creative. I so enjoy your stories. Especially since I love your family?
